Pad Thai… sorta

This is a take on one of the most iconic Thai dishes: Pad Thai.  As always with Thai food, there are lots of ingredients, and loooots of chopping, but once prepared, the cooking takes minutes.

Recipe

  • Red curry paste
  • Chopped Garlic
  • Chopped Ginger
  • Chopped Chili
  • Chopped Coriander, including the stem
  • Sesame Seeds
  • Chicken Breast, Sliced
  • Rice Noodles
  • Chopped Scallions
  • Bean Sprouts
  • Cherry Tomatoes, havled
  • Fresh lime juice or Rice vinegar
  • Whole egg
  • Fish sauce
  • Caster Sugar
  • Fried onions

As i said:  Chop, Chop and Chop some more. Soak the rice noodles in boiling water for about 4 minutes depending on the type u use (do not overcook, or it will be horrible)

In a wok, add some oil and fry off curry past, garlic, ginger, chili, coriander and sesame seeds. Add the chicken and cook for a couple of minuts. Add Sugar, fish sauce, vinegar and some fried onions. Now add the drained noodles, tomatoes, bean sprouts and scallions. Finally make room in the wok to fry the egg. When cooked, combine the loot.

Sprinkle with some more fried onions and serve.

Crab Ravioli With Chorizo And Fennel

This is a simple little dish that can be made in 15 minutes if you cheat and use store bought ravioli 🙂

Recipe

  • High quality store bought ravioli ..
  • Chorizo
  • Onion
  • Fennel
  • Spring onions
  • White whine
  • Double cream
  • Smoked paprika
  • Lemon
  • Salt & Pepper

Fry the chorizo in olive oil, add chopped onions, fennel and a small amount of smoked paprika. Add the wine and reduce. Add the cram and some of the cooking liquid from the ravioli. In the meantime cook the ravioli, drain and add to the sauce. Season with lemon, salt and pepper. Serve immediately, sprinkled with spring onion and more fennel.

Goat Cheese / Parma Ham Stick’s

Another quick snack inspired by the local Sticks‘n’Sushi.. They are super easy to make! Just cheese, ham and a stick 🙂

Recipe

  • Goat Cheese
  • Parma Ham
  • Wooden sticks (cut in half)

Roll a thin slice of parma ham around a piece of cheese, and fry til the parma ham is golden and the cheese is just starting to melt. Plug a stick in each one (this is much easier aften you fried them, and allows for more cheesy snacks  in the pan at once)

Edamame beans, tossed in ginger and chili

Celebrating a completely redesigned blog!! Given all the time spent getting it ready there was no time for cooking.. so here is a quick snack for you.

Recipe

  • Edamame Beans 
  • Ginger
  • Chili
  • Garlic
  • Soy
  • Toasted sesame oil

Steam the edamame beans for about 5 minutes. Meanwhile chop the ginger, garlic and chili. Heat a wok and fry the ginger, garlic and chili for a couple of minutes. Add the steam edamame beans, some sesame oil. Toss and serve!

Smoked Salmon Cannelloni with buttermilk/schnapps foam

Another quick starter, I just love… The airy, creamy filling (mascarpone and whipped cream) works perfectly with the smoked salmon. The buttermilk/schnapps foam just adds another twist. It’s the posh edition of the classic, smoked salmon and cream cheese, combo. Credits go to Bind, for the inspiration.

Recipe

  • Smoked salmon
  • Mascarpone
  • Whipped cream
  • Mixed fresh herbs (i used: dild and tarragon)
  • Buttermilk
  • Creme fraiche
  • Schnapps

Whip the mascarpone until silky smooth. Whip the cream and fold into the mascarpone (half/half). Chop the herbs and add them to the mix. Season with salt, pepper and lemon juice. Place a slice of salmon on a piece of cleanfilm, add some of the filling and roll it together tightly. Set to cool and firm up, in the fridge.

 

Combine 1 part buttermilk and 1 part creme fraiche. Add a small amount of schnapps, season with salt and pepper (the buttermilk will provide the acidity). Blitz it all together until you have a nice foam.

Moules au curry

Moules au curry

Many people are scared of eating mussels. This version has converted many of my friends into true believers! As an added bonus It’s fast and easy to make 🙂

Recipe

  • 1 kilo of fresh blue mussels
  • 1 garlic clove
  • 1 large onion
  • 1/4 Fennel
  • 1/4 bottle of white wine
  • curry powder
  • Cream
  • Salt & pepper

Start by thoroughly cleaning the mussels, discard any that are not closed (or don’t close if you tap them).

Chop the garlic, onion and fennel finely. Fry in a large pot together with a tablespoon of curry powder. Add the white whine.

Add the cleaned mussels and cover with a lid. Steam the mussels for about 3-5 minutes.

Strain out the broth and reduce for a couple of minutes, then add some cream and season with salt, pepper and some additional curry powder to taste.

Pour the broth back over the mussels and serve with bread…

Prawns with bassil aioli

Pure summer bliss..Buy the freshest prawns you can get from you local fishmonger, serve with aioli, bread and a refreshing glas of white wine.

Recipe

Aioli

  • 1-2 egg yolks (pasteurised)
  • 1 tsp. Mustard
  • quite a lot of olive oil
  • Lemon juice
  • Chopped garlic
  • Chopped bassil
  • Salt & Pepper

Whip egg yolks together with some mustard and chopped garlic. Keep whisking while slowly adding the oil. Eventually you will end up with a nice thick consistency. Thin it down with some lemon juice and season with basil, salt & pepper.

White Russian

Well, I was watching The Big Lebowski and just had to have a white russian.. Im read somewhere “The Dude” drinks nine of them throughout the movie 🙂 My version uses full milk instead of Cream, to make the drink more refreshing.

  • 1 1/2 parts       Vodka
  • 1 part               Coffe liqueur
  • 2 pars               Full milk

Build in a Old Fashioned glass with Ice

Easter Eggs

Easter eggs

A fast and fun easter snack! White chocolate and lemon peel make out the egg-white, yellow M&M’s the yolk. The only major work is eating all the non yellow M&M’s  😀

Recipe

  • White chocolate
  • Lemon peel
  • Yellow M&M’s

Melt the chocolate and add the lemon peel. Make small blobs of the “egg-white” and put a M&M in the middle. Leave to cool…
