DIY Pizza: parma ham, goat’s cheese and parsley

I am almost always in the mood for a lovely Pizza Pie.I must confess, I do buy more of them then I make my self, but when I do have the time, its always a pleasant acquaintance! This recipe is really just a template for what ever your like on your pizza, feel free to substitute the toppings with your favorite choices.

Pizza dough

  • Tipo 00 flour
  • water
  • Yeast
  • Salt
  • Olive oil

Crumble the yeast into the lukewarm water , add salt and olive oil. Add flour until you have a nice dough. Keep kneading for about 5-10 minutes. then set to rest for about 1 hour. After resting, separate into fist size pieces and rest again for about 30min. Roll out to a thin disk.

Tomato sauce

  • Tomatoes
  • Onion
  • Garlic
  • Thyme
  • Balsamic vinegar
  • Salt & pepper
  • Olive oil

Sweat of onions garlic and thyme, add the tomatoes and balsamic vinegar. fry for a couple of minutes. Season with salt, pepper and a god helping of olive oil. Blitz in a blender until smooth.

Toppings & assembly

  • Parma ham
  • Mozzarella
  • Goat’s cheese
  • Flat leaf parsley

Preheat the oven at full whack (if you have a pizza stone, now is the time to use it)  Roll out the dough, add a small layer of the tomato sauce. Add the toppings (Don’t overcrowd the pizza, or you will end up with a soggy crust.) Cook  for abut 10 min..

Prawn Risotto

Prawn risotto with lemon and thyme

A Italian classic. Risotto has the ability to morph into whatever you like. A simple everyday dinner, or a fancy meal. This edition is on the simple side, with a fresh lemon and thyme taste.

Recipe

  • Prawns
  • Peas
  • Risotto rice
  • Onion
  • Garlic
  • Celery
  • White whine
  • Chicken or vegetable stock
  • Lemon juice
  • Fresh thyme
  • Butter

Chop and fry the celery, onion and garlic for a couple of minutes. Increase the heat and add the rice. Stir until the rice is translucent. Add the white whine and cock until reduced. Under constant stirring ad the stock ladle by ladle until the rice is al dente. Add the peas and prawns towards the end.

Finally add lemon, thyme and butter. Season with salt and pepper.

BLT

Eggy bread B.L.T.

Sandwiches make a great snack or a complete meal.  This turned out to be a variation on the classic (B)acon, (L)ettuce, (T)omato sandwich. Tomatoes and bacon are a no brainer, so I kept them. Instead of plain lettuce i substituted for tasty flat leaf parsley. Plain white bred was replaced by eggy bread.

Recipe

  • Slices of bread
  • Egg
  • milk
  • Bacon
  • Tomatos
  • Flatleaf parsley
  • Onion
  • Mayo
  • Chili sauce

Fry the bacon, place on kitchen paper to drain.

Whisk together the egg and milk, season with salt and pepper. Place 2 slices of bread in the mixture to soak for a couple of minutes.

Fry the bread slices on both sides until golden brown.

Spread som mayo and chili sauce on both pieces of bread and assemble the sandwich.

Creamy spinach & bacon penne

Another quick, everyday pasta dish. The simple ingredients combine to give a tasty and filling meal.

Recipe

  • Pasta Penne
  • Bacon
  • Onions
  • Garlic
  • Spinach
  • Cream
  • Nutmeg

Start cooking the Pasta..
Fry the bacon, remove from the pan (including most of the bacon fat), place on kitchen paper to drain.
Chop the onion and garlic and fry in the same pan.
Rinse the spinach and add to the pan.
Add the cream, season with nutmeg, salt&pepper
Drain the pasta and combine it with the sauce and bacon.

Just found this dish from my archive. It’s  from earlier in the year where the grass was still green and the weather in Denmark would allow for dining outside. Quite a big contrast to the snow currently falling ..

I have always loved seafood, and this recipe is a easy way to enjoy a lot of langoustine. As long as your not afraid of getting your hands dirty 🙂

Don’t throw the left over shells away, they make the best soup base you have ever tasted…

Recipe

  • Langoustine
  • Butter
  • Garlic
  • Chives
  • Lemon juice

Half the langoustine lengthwise and place in a fireproof dish.

Melt the butter and ad the copped garlic and chives. Add the lemon juice

Pour the flavored butter over the langoustine.

place the dish under the grill (lid closed) for about 6 minutes.

Old school cocktail: Whiskey sour

Recently i discovered this old school classic cocktail. Some may be intimidated by the contents of egg white, but fear not, it delicious 🙂

Recipe

  • 3 parts      –  Bourbon whiskey
  • 2 parts      –  Fresh lemon juice
  • 1 part        –  Simple sirup
  • 1 tsp.         –  Egg white (or pasteurized egg white)

shake with ice, and serve.

Indian Vegetable Curry

Indian Vegetable Curry

I made this dish a couple of moths ago, having just gotten a shipment of nice fresh vegetables. In this dish they really stand out, and ill bet you will get a nice surprise…meat is not always necessary…

Recipe

As this dish i all about the vegetables, its terribly important that you get the best you can afford. It makes all the difference! Also, be careful not to cock the vegetables for to long, they should be firm and crunchy to bite into.

  • basmati rice
  • Carrots
  • Cauliflower
  • Green asparagus
  • Garlic
  • Onion
  • Chili
  • Fresh Coriander
  • Coriander seeds
  • Cumin seeds
  • Star anis
  • Tomato paste
  • Coconut milk

fry the coriander and cumin seeds in a pan, transfer to a morar with the star anis, garlic and chili. Pound until you have a nice paste.

Cut the vegetables into bite size pieces  and stir fry in (quite a lot of) butter with the curry paste.

Add the coconut milk and some tomato paste. Season with salt and pepper

Serve on rice with chopped coriander on top.

I was looking for something to eat this evening, but with no energy to go grocery shopping, the requirements for this recipe was twofold.

1.  Only use ingredients I already had lying around.

2.  Easy and fast to make.

The end result was this pasta dish with a nontraditional homemade pesto. It’s literally possible to make this dish in the time it takes to cook the pasta.. thats pretty fast i my book 🙂

Recipe

  • Dried pasta, preferably linguini
  • Flat leaf parsley
  • Fresh thyme
  • Almonds
  • Parmesan cheese
  • Chili
  • Garlic
  • Extra virgin olive oil
  • Fresh lime juice
  • Cherry Tomatoes

Start cooking the Pasta..
In a small pan, fry the cherry tomatoes in olive oil and salt & pepper
Toast the almonds in another pan
Combine parsley, thyme, chili, garlic, almonds and parmesan in a pestle & mortar and pound… Add olive oil until you have a fine paste. Season with salt, pepper and lime juice

Drain the pasta and combine with the pesto. Serve with the fried tomatoes…

Spicy thai soup with duck

Winter is getting closer and the temperature is dropping. What better way to keep warm then with a nice spicy soup.

Recipe

  • Red curry paste
  • Chopped Garlic
  • Chopped Ginger
  • Chopped Chili
  • Mushrooms
  • egg noodles
  • Duck stock (homemade if you have the time..)
  • Coconut milk
  • Fresh lime juice
  • Fish sauce
  • scalions
  • red peppers
  • Bean sprouts
  • Fresh Coriander
  • Duck breast

Fry the curry paste, garlic and ginger , add all the vegetables (cut into mouth size pieces) and fry a couple of minutes. Add the coconut milk and stock. Bring to a boil and add the egg noodles.  Let it simmer for about 5 minutes, depending on the noodles cooking time… Season with lime juice and fish sauce.

Score the fat of the duck and season it on both sides with a good helping of salt and pepper.

Fry the Duck breast, skin side down until crisp, turn and place in a hot oven, take out and rest for a couple of minutes. Cut into slices

Serve the soup in large bowls with a god helping of bean sprouts and coriander on top. sprinkle with chili.

Sausage

Spiced up sausage

My long time friend, Thomas, invited me to this simple but very tasteful dinner: Sausage from the local butcher with a lot of different herbs. Definitely a new favorite!

Recipe

  • Best sausage you can find
  • Onion
  • Celery
  • Sage
  • Thyme
  • Tarragon
  • Parsly
  • White wine

Chop and fry the onion and celery, add the sausage, finish of with white wine and the herbs. DONE 🙂
