Pizza: Pickled Onions & Cheese

Another day, another Pizza recipe! Hope you like onions…

Pizza dough

Follow this easy recipe, or buy it ready made if your lazy like i was 😉

Pickled onions

  • Onion (2-3 big ones..)
  • Apple vinegar
  • Caster sugar
  • Salt & pepper

Slice the onions, add to a saucer with 1 cup of apple vinegar and half the amount of caster sugar. Simmer 15-20 minutes..

Toppings & assembly

  • Pickled Onions
  • 2-3 of your favorit cheeses
  • Red Chili
  • Thyme

Roll out the dough, add the pickled onions + your favorite cheeses, chili and thyme..

Cheese with homemade oatmeal-crispbread

Cheese with rhubarb and oatmeal-crispbread

New year dinner, course 4:  Gotta’ have cheese, it’s as simple as that. To make it a bit more fancy it was served with rhubarb and home made crispbread (knækbrød here in Denmark) based on oatmeal (thanks to Mille for the great tip!).

Recipe

Rhubarb

  • Rhubarb
  • Caster sugar
  • Water

Cut the rhubarb into pieces, sweeten with sugar and cook with a bit of water until they begin to lose their firm texture. leave to cool.

Oatmeal crispbread

  • 1 part Oats
  • 2 parts Water
  • salt

Combine and cook for about 5 minutes. Spread the oatmeal thinly on a baking sheet and cook until lightly brown and crispy.

CheeseFondue

Cheese Overload – Cheese Fondue

A weekend visit in Zürich, Switzerland and of course we needed to make this classic… Nothing much to add other than.. try not eating to much, to often 🙂

Recipe

  • Gruyere cheese
  • Emmentaler cheese
  • Garlic clove
  • white wine
  • Pepper
  • Nutmeg
  • a lot of bread pieces
  • starch

Rub the dish with the garlic clove, add the whine and turn the heat to low. Dice the gruyere and emmentaler and add.

When the cheese is completely melted, add pepper and nutmeg, starch as needed.
